Stuffed Venison Roast
What you will need:
One 3 pound venison roast
2 tbls salad oil
Water
1 medium onion, chopped up
¼ cup Baking soda
¼ cup salt
10 strips of bacon
1 green pepper diced up
One 12 oz package of kielbasa, smoked preferably, cook it, and slice it
Garlic Powder….just a dash
Season salt
Take the roast and put it in a large pan or container that will hold enough water to cover the roast, add the water, add the salt, add the baking soda, and let it sit overnight in the fridge.
The next day, remove the roast and discard the water. Heat the salad oil on a saucepan, add the bacon, green peppers, onion, and kielbasa. Saute this until the vegetables are nice and tender. Sprinkle a little Season Salt over it.
Mow cut the roast in half lengthwise and fill it with half of the vegetable-kielbasa mixture. Replace the top back on and spoon the remaining mixture over the top. Season it with the salt and the garlic powder. Now wrap it all up in foil and put it in a baking dish or a casserole dish and bake it at 350 degrees for 2 hours.
Take it out, remove the foil and chow down.
